Ingredients

  • 4 medium sweet potatoes
  • 1 cup tart cranberries
  • 1 large apple, diced
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • Butter or olive oil for sautéing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prick the sweet potatoes all over and bake for 45–60 minutes, until tender.
  3. In a skillet, heat butter or olive oil and sauté the diced apples and cranberries until softened.
  4. Once sweet potatoes are done, let cool slightly, cut in half, and scoop out the insides into a bowl.
  5. Combine the scooped sweet potato with the sautéed apple mixture, maple syrup, cinnamon, nutmeg, salt, and pepper. Mix well.
  6. Spoon the mixture back into the sweet potato shells and return to the oven for an additional 15–20 minutes, until golden and heated through.

Notes

Garnish with a sprinkle of cinnamon or maple syrup. Pairs well with roasted meats or a fresh salad.
