- 4 medium sweet potatoes
- 1 cup tart cranberries
- 1 large apple, diced
- 2 tablespoons maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- Salt and pepper to taste
- Butter or olive oil for sautéing
Instructions
- Preheat your oven to 400°F (200°C).
- Prick the sweet potatoes all over and bake for 45–60 minutes, until tender.
- In a skillet, heat butter or olive oil and sauté the diced apples and cranberries until softened.
- Once sweet potatoes are done, let cool slightly, cut in half, and scoop out the insides into a bowl.
- Combine the scooped sweet potato with the sautéed apple mixture, maple syrup, cinnamon, nutmeg, salt, and pepper. Mix well.
- Spoon the mixture back into the sweet potato shells and return to the oven for an additional 15–20 minutes, until golden and heated through.
Notes
Garnish with a sprinkle of cinnamon or maple syrup. Pairs well with roasted meats or a fresh salad.
