- 1 lb steak (sirloin or ribeye)
- Salt and black pepper
- Garlic powder
- Smoked paprika
- 2 tbsp olive oil
- 4 tbsp butter
- 5 cloves garlic, minced
- 1 cup heavy cream
- 3/4 cup whole milk
- 1 1/4 cups parmesan, shredded or freshly grated
- Parsley, chopped (optional)
- Red pepper flakes (optional)
- Cracked black pepper (optional garnish)
Instructions
- Cook the tortellini: Start by boiling water with a pinch of salt. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.
- Sear the steak: Season the steak generously with salt, black pepper, garlic powder, and smoked paprika. Heat olive oil in a skillet over medium-high heat. Once hot, add the steak; sear for about 4-5 minutes per side for medium-rare, adjusting the time to your preferred doneness. Let it rest before slicing.
- Make the sauce: In the same skillet, reduce the heat to medium and add butter. Once melted, add minced garlic and sauté for 1-2 minutes until fragrant. Pour in heavy cream and whole milk, stirring to combine. Gradually mix in the parmesan cheese, allowing it to melt and create a creamy sauce.
- Combine and serve: Toss the cooked tortellini in the sauce until well coated. Slice the seared steak and add on top. Garnish with parsley and cracked black pepper if desired.
Notes
Make sure to let the steak rest after cooking to maintain its juices. Use freshly grated parmesan for better melting and flavor.
