  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red chili flakes
  • 2 tablespoons olive oil
  • 6 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh thyme

Instructions

  1. Cut the chicken thighs into bite-sized pieces. Season with salt, black pepper, smoked paprika, and red chili flakes. Let sit for 10–15 minutes.
  2. In a small pan over low heat, melt the unsalted butter. Add minced garlic and cook until fragrant, then stir in Dijon mustard, lemon zest, lemon juice, parsley, and thyme. Set aside.
  3. Heat a skillet over medium-high heat and add olive oil. Sear the seasoned chicken in batches for about 6-7 minutes per batch until golden and crispy.
  4. Return all chicken to the skillet and pour in the cowboy butter mixture. Toss to coat and let it sizzle for 1 minute.
  5. Serve hot, garnished with herbs or lemon wedges. Enjoy!
