- 1.5 pounds boneless skinless chicken thighs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon red chili flakes
- 2 tablespoons olive oil
- 6 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley
- 1 teaspoon chopped fresh thyme
Instructions
- Cut the chicken thighs into bite-sized pieces. Season with salt, black pepper, smoked paprika, and red chili flakes. Let sit for 10–15 minutes.
- In a small pan over low heat, melt the unsalted butter. Add minced garlic and cook until fragrant, then stir in Dijon mustard, lemon zest, lemon juice, parsley, and thyme. Set aside.
- Heat a skillet over medium-high heat and add olive oil. Sear the seasoned chicken in batches for about 6-7 minutes per batch until golden and crispy.
- Return all chicken to the skillet and pour in the cowboy butter mixture. Toss to coat and let it sizzle for 1 minute.
- Serve hot, garnished with herbs or lemon wedges. Enjoy!
