Description

A crowd-pleasing dish that combines the smoky flavor of barbecue, crispy bacon, and melted cheddar cheese enveloping juicy chicken breasts.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 slices bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup barbecue sauce
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to drain.
  3. Crumble the cooled bacon and set it aside.
  4. Rub both sides of each chicken breast with olive oil and season with garlic powder, onion powder, smoked paprika, salt, and black pepper.
  5. Heat a large, oven-safe skillet on medium-high. Cook the seasoned chicken for 4-5 minutes on each side until a golden-brown crust forms.
  6. While the chicken cooks, chop the green onions and prepare the barbecue sauce.
  7. Pour the barbecue sauce over the seared chicken. Top with cheddar cheese and crumbled bacon.
  8. Transfer the skillet to the preheated oven and bake for 10-12 minutes until the chicken is fully cooked and the cheese is melted and bubbly.
  9. Remove from the oven, sprinkle with green onions, and optionally, add red pepper flakes for some extra heat.
  10. Allow the dish to rest for a few minutes before serving.

Notes

Best served with a fresh green salad or classic coleslaw. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
