- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 slices bacon
- 1 cup shredded cheddar cheese
- 1/2 cup barbecue sauce
- 1/4 cup green onions, chopped
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to drain.
- Crumble the cooled bacon and set it aside.
- Rub both sides of each chicken breast with olive oil and season with garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Heat a large, oven-safe skillet on medium-high. Cook the seasoned chicken for 4-5 minutes on each side until a golden-brown crust forms.
- While the chicken cooks, chop the green onions and prepare the barbecue sauce.
- Pour the barbecue sauce over the seared chicken. Top with cheddar cheese and crumbled bacon.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes until the chicken is fully cooked and the cheese is melted and bubbly.
- Remove from the oven, sprinkle with green onions, and optionally, add red pepper flakes for some extra heat.
- Allow the dish to rest for a few minutes before serving.
Notes
Best served with a fresh green salad or classic coleslaw. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
