Bite-sized breakfast treats that capture the indulgent flavors of McDonald’s McGriddle, combining pancakes, sausage, and cheese.
Ingredients

- 2 cups pancake mix
- 1 1/2 cups water
- 8 sausage patties
- 8 slices of cheese (American or cheddar)
- Maple syrup (for serving)
Instructions
- In a large mixing bowl, combine the pancake mix and water, stirring until you achieve a smooth batter.
- Heat a non-stick skillet over medium heat.
- Pour about 2 tablespoons of batter onto the skillet for each mini pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
- To assemble, take one mini pancake, place a sausage patty and a slice of cheese on top, then finish with another mini pancake.
- Repeat the process until you’ve used up all the ingredients.
- Drizzle with warm maple syrup just before serving.
Notes
Consider using flavored sausage or different cheeses for variety. Can be stored for up to 3 days in the fridge or frozen for a month.
