Description

A cozy and delicious family dinner featuring tender chicken breasts with a crispy coating and zesty lemon flavors.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 2 pounds), pounded evenly
  • Salt and black pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon water
  • 3/4 cup finely shredded Romano cheese
  • 1 cup plain breadcrumbs or panko
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 12 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • Chopped parsley, for garnish (optional)

Instructions

  1. Pound chicken to 1/2-inch thickness and season with salt and pepper.
  2. Place flour in one bowl, beaten eggs with water in another, and breadcrumbs mixed with Romano cheese in a third.
  3. Coat each breast in flour, dip in egg, then cover in breadcrumb-cheese mixture. Press coating firmly.
  4. Heat olive oil and butter in a skillet over medium heat. Fry chicken for 4–5 minutes per side until golden brown and cooked through (165°F internal temperature).
  5. Place chicken on a paper towel-lined plate. Drizzle with lemon juice, sprinkle zest, and garnish with parsley.

Notes

Make sure to pound the chicken evenly for a uniform cook. Use fresh lemons for the best flavor.
