  • Yield: 12 servings 1x
  • Diet: Vegetarian

Description

A luscious coffee cheesecake that perfectly balances the richness of cream cheese with the bold flavor of brewed coffee, ideal for any occasion.

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs
  • 1/2 cup brewed coffee, cooled
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine the graham cracker crumbs with melted butter in a medium bowl. Press this mixture firmly into the bottom of a 9-inch springform pan.
  3. Beat the softened cream cheese with sugar in a large mixing bowl until perfectly smooth.
  4. Add the sour cream, cooled coffee, and vanilla extract, mixing well to combine.
  5. Incorporate the eggs one at a time, mixing on low speed until just blended.
  6. Pour the cheesecake mixture over the prepared crust in the springform pan.
  7. Bake for about 55-60 minutes, or until the center is set but slightly jiggly.
  8. Turn off the oven, crack the door, and allow the cheesecake to cool inside for an hour.
  9. Refrigerate for at least 4 hours, preferably overnight, to enhance the flavors and texture.
  10. Serve chilled and enjoy!

Notes

For a gluten-free option, use gluten-free graham crackers for the crust.
