- 3 large eggs
- 1/2 cup brewed coffee, cooled
- 2 teaspoons vanilla extract
Instructions
- Preheat your oven to 325°F (160°C).
- Combine the graham cracker crumbs with melted butter in a medium bowl. Press this mixture firmly into the bottom of a 9-inch springform pan.
- Beat the softened cream cheese with sugar in a large mixing bowl until perfectly smooth.
- Add the sour cream, cooled coffee, and vanilla extract, mixing well to combine.
- Incorporate the eggs one at a time, mixing on low speed until just blended.
- Pour the cheesecake mixture over the prepared crust in the springform pan.
- Bake for about 55-60 minutes, or until the center is set but slightly jiggly.
- Turn off the oven, crack the door, and allow the cheesecake to cool inside for an hour.
- Refrigerate for at least 4 hours, preferably overnight, to enhance the flavors and texture.
