Description

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup whole milk
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • For the Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, cold and cut into small pieces
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Prepare a muffin tin by lining it with paper liners or greasing it lightly.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon until well combined.
  3. In a separate bowl, combine the melted butter, milk, eggs, and vanilla extract. Whisk until everything is nicely blended.
  4. Pour the wet ingredients into the dry ingredients, mixing gently until just combined. Take care not to overmix!
  5. For the streusel topping, mix flour, brown sugar, and cinnamon in a small bowl. Add the cold butter pieces and use your fingers or a pastry cutter to create coarse crumbs.
  6. Spoon the muffin batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Sprinkle the streusel mixture evenly over the batter in each muffin cup.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a lighter version, consider using applesauce for half the butter. Store in an airtight container for up to three days or freeze for longer.
