- 2 large eggs
- ½ teaspoon salt (for the pasta water)
- 12 ounces dried spaghetti or linguine noodles
- 1 teaspoon coarsely ground black pepper (extra for garnish)
- 1 cup finely shredded Parmesan cheese (or Pecorino Romano)
- 2 egg yolks
- ½ cup reserved pasta cooking liquid
Instructions
- Bring a large pot of water to a rolling boil, season with salt, and add pasta. Cook until al dente.
- Reserve ½ cup of pasta water before draining, then drain thoroughly.
- In a large sauté pan, crisp the bacon over medium heat until golden.
- In a mixing bowl, whisk together the eggs, yolks, cheese, and black pepper.
- With the heat off, add hot, drained pasta to the pan with bacon and mix in the egg-and-cheese mixture.
- If the sauce is too thick, adjust with reserved pasta water for desired creaminess.
- Serve immediately, garnished with more cheese and black pepper.
Notes
For best results, toss the pasta with the egg mixture off the heat to prevent scrambling the eggs. Use freshly grated cheese for a smoother sauce.
