Description

A vibrant and refreshing pasta salad with al dente pasta, crisp vegetables, and a zesty dressing, perfect for any occasion.


Ingredients

  • 2 cups of pasta (any shape)
  • 1 cup of cherry tomatoes, halved
  • 1 cup of cucumber, diced
  • 1 cup of bell pepper, chopped
  • 1/2 cup of red onion, finely diced
  • 1/2 cup of black olives, sliced
  • 1 cup of mozzarella balls, halved
  • 1/3 cup of olive oil
  • 1/4 cup of red wine vinegar
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and let cool.
  2. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, black olives, and mozzarella.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
  4. Add cooled pasta to the bowl of veggies. Pour dressing over the mixture and toss gently to combine.
  5. Adjust seasoning if necessary and refrigerate for at least 30 minutes before serving.

Notes

For best flavor, let the salad sit for at least an hour or overnight. Add dressing just before serving.
