Description

- 4 large onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon sugar
- 4 cups beef broth
- 1 cup white wine
- 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
- 1 bay leaf
- Baguette slices
- 1 1/2 cups shredded Gruyère cheese
Instructions
- In a large pot, melt the butter and olive oil over medium heat.
- Add the sliced onions, salt, and sugar, cooking until caramelized (about 30-40 minutes), stirring occasionally.
- Once the onions are golden brown, add the white wine to deglaze the pot and cook for 2-3 minutes.
- Add the beef broth, thyme, and bay leaf. Simmer for 30 minutes.
- Preheat the oven to broil.
- Ladle the soup into oven-safe bowls, top each with a slice of baguette, and sprinkle with Gruyère cheese.
- Broil until the cheese is melted and bubbly. Serve hot.
Notes
For a vegetarian version, substitute beef broth with vegetable broth. Feel free to experiment with herbs or different types of cheese.
