Description

A warm and comforting dish with rich broth filled with caramelized onions, topped with a crunchy baguette slice and melted Gruyère cheese.


Ingredients

  • 4 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 4 cups beef broth
  • 1 cup white wine
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • 1 bay leaf
  • Baguette slices
  • 1 1/2 cups shredded Gruyère cheese

Instructions

  1. In a large pot, melt the butter and olive oil over medium heat.
  2. Add the sliced onions, salt, and sugar, cooking until caramelized (about 30-40 minutes), stirring occasionally.
  3. Once the onions are golden brown, add the white wine to deglaze the pot and cook for 2-3 minutes.
  4. Add the beef broth, thyme, and bay leaf. Simmer for 30 minutes.
  5. Preheat the oven to broil.
  6. Ladle the soup into oven-safe bowls, top each with a slice of baguette, and sprinkle with Gruyère cheese.
  7. Broil until the cheese is melted and bubbly. Serve hot.

Notes

For a vegetarian version, substitute beef broth with vegetable broth. Feel free to experiment with herbs or different types of cheese.
