Ingredients

- 1/2 cup unsweetened cocoa powder
- 1/2 cup milk
- 1/2 cup butter
- 3 cups quick oats
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a medium saucepan, mix together sugar, cocoa powder, milk, butter, and a pinch of salt.
- Heat over medium heat, stirring frequently until the mixture comes to a rolling boil. Once it boils, cook for exactly 1 minute without stirring.
- Remove from heat and stir in vanilla extract followed by the oats until well combined.
- Using a spoon, drop small mounds of the mixture onto a sheet of wax paper or parchment paper.
- Allow the cookies to cool completely until set before serving.
Notes
Store in an airtight container at room temperature for up to a week, refrigerate for two weeks, or freeze for up to three months.
