Delightful muffins that bring the warm flavors of French toast into a convenient, bite-sized form.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup milk
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 tablespoons granulated sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin well.
  2. Whisk together the flour, baking powder, salt, and cinnamon in a large bowl until fully combined.
  3. In another bowl, combine the milk, eggs, melted butter, sugar, and vanilla extract. Mix until smooth.
  4. Pour the wet ingredients into the dry ingredients, stirring gently until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. In a small bowl, mix the sugar and cinnamon for the topping, then sprinkle it generously over each muffin.
  7. Bake for 18-20 minutes until golden brown. A toothpick inserted in the center should come out clean.
  8. Let cool slightly before serving.

Notes

Store in an airtight container at room temperature for up to 2 days or freeze for up to 2 months. Don’t overmix the batter for fluffiest muffins.
