Instructions
- Mix the dry ingredients: In one bowl, whisk together the flour, baking powder, salt, and cinnamon.
- Combine wet ingredients: In another bowl, blend the milk, egg, vegetable oil, and melted butter. Add the sugar and vanilla extract, mixing well.
- Combine both mixtures: Slowly incorporate the dry ingredients into the wet ingredients until just combined. Avoid overmixing.
- Prepare the cinnamon swirl: In a small bowl, combine the brown sugar and cinnamon.
- Heat your griddle: Preheat a non-stick skillet or griddle over medium heat and lightly grease it with butter.
- Cook the pancakes: Pour 1/4 cup of the pancake batter onto the griddle. Sprinkle a spoonful of the cinnamon-sugar mixture in the center, then cover with more batter to prevent burning. Cook until bubbles form, then flip and cook until golden brown.
- Make the cream cheese glaze: In a bowl, mix cream cheese, powdered sugar, and a splash of milk until smooth.
- Serve your pancakes: Place pancakes on a plate and drizzle with the cream cheese glaze. Enjoy immediately!
Notes
To store leftovers, stack pancakes with parchment paper in between and refrigerate for up to three days. For longer storage, freeze for about two months.
