- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg

- For the Filling:
- ½ cup brown sugar, packed
- 2 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the flour, baking powder, salt, and ground cinnamon until well-combined.
- In another bowl, cream the softened butter with both granulated and brown sugar until the mixture is fluffy and light.
- Beat in the egg and vanilla extract until the mixture is smooth.
- Gradually combine the dry ingredients with the wet ingredients, mixing until just combined.
- For the filling, mix the brown sugar and cinnamon in a small bowl.
- Roll out half of the dough onto parchment paper, sprinkle it with the filling, and roll it up tightly.
- Slice the rolled dough into rounds and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the cookies are golden brown.
Notes
For added variety, consider chocolate chips in the dough or nuts in the filling. Store in an airtight container at room temperature for up to a week.
