- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg
- 2 tsp vanilla extract
- ½ cup brown sugar, packed (for filling)
- 2 tsp ground cinnamon (for filling)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking powder, salt, and 1 tsp of cinnamon. Set aside.
- In a large bowl, cream the softened butter with the granulated sugar and brown sugars until light and fluffy.
- Beat in the egg and vanilla extract until smooth and well combined.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- For the filling, combine the remaining brown sugar and ground cinnamon in a small bowl.
- Roll out half of the dough between two sheets of parchment paper, then sprinkle half of the filling mixture evenly over the dough. Roll it up tightly to form a log.
- Slice the log into rounds and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until golden brown around the edges.
Notes
Store cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze them for up to three months.
