Description

Delightful cookies that combine the sweet, buttery goodness of cinnamon rolls in a convenient bite-sized treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • ½ cup brown sugar, packed (for filling)
  • 2 tsp ground cinnamon (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, salt, and 1 tsp of cinnamon. Set aside.
  3. In a large bowl, cream the softened butter with the granulated sugar and brown sugars until light and fluffy.
  4. Beat in the egg and vanilla extract until smooth and well combined.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. For the filling, combine the remaining brown sugar and ground cinnamon in a small bowl.
  7. Roll out half of the dough between two sheets of parchment paper, then sprinkle half of the filling mixture evenly over the dough. Roll it up tightly to form a log.
  8. Slice the log into rounds and place them on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes, or until golden brown around the edges.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze them for up to three months.
