A delightful twist on a classic, this cinnamon roll cake combines the fluffy decadence of cake with the gooey satisfaction of cinnamon rolls, perfect for brunch or gatherings.


Ingredients

  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup butter, melted
  • 2 tsp ground cinnamon
  • 1/2 cup brown sugar
  • Optional: Cream cheese icing for drizzling

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together eggs, milk, and melted butter until combined.
  4. <li Gradually add the wet ingredients to the dry ingredients, stirring until just mixed.

  5. In a small bowl, mix together the cinnamon and brown sugar for the filling.
  6. Pour half of the cake batter into the prepared dish, and sprinkle half of the cinnamon mixture on top.
  7. Pour the remaining batter over the cinnamon layer, then sprinkle the rest of the cinnamon mixture on top.
  8. Use a knife to swirl the batter and filling together gently.
  9. Bake in the preheated oven for about 30-35 minutes or until a toothpick comes out clean.
  10. Let cool slightly, then drizzle with icing before serving.

Notes

This cake can be stored for up to 4 days at room temperature or frozen for 2-3 months. For a gooey center, consider adding more filling mixture.
