Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate ganache (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Beat the softened butter with the granulated sugar and brown sugar in a large bowl until creamy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Scoop tablespoon-sized balls of dough and roll them into balls. Place them on the prepared baking sheets with adequate space.
  7. Use your thumb to make an indentation in the center of each ball.
  8. Bake for 10-12 minutes, pressing the centers again if necessary after removing them from the oven.
  9. Allow the cookies to cool completely before filling the centers with chocolate ganache.
  10. Let the ganache set before serving.

Notes

Store in an airtight container at room temperature for up to a week. Freeze for up to three months with parchment paper between layers.
