- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chocolate ganache (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Beat the softened butter with the granulated sugar and brown sugar in a large bowl until creamy.
- Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Scoop tablespoon-sized balls of dough and roll them into balls. Place them on the prepared baking sheets with adequate space.
- Use your thumb to make an indentation in the center of each ball.
- Bake for 10-12 minutes, pressing the centers again if necessary after removing them from the oven.
- Allow the cookies to cool completely before filling the centers with chocolate ganache.
- Let the ganache set before serving.
Notes
Store in an airtight container at room temperature for up to a week. Freeze for up to three months with parchment paper between layers.
