- 1 ½ cups chopped strawberries
- 1 cup plain Greek yogurt
- 1 tbsp honey
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
- 2 tbsp coconut oil
Instructions
- In a large bowl, combine the chopped strawberries, Greek yogurt, honey, and vanilla extract. Stir until well blended.
- Using a spoon, scoop about 2 tablespoons of the yogurt mixture and dollop it onto a parchment-lined baking sheet, creating approximately 10 clusters.
- Place the baking sheet in the freezer and allow the clusters to freeze completely, about 1-2 hours.
- Once frozen, heat the chocolate chips and coconut oil in a microwave-safe bowl, microwaving in 15-30 second increments and stirring in between until smooth.
- Remove the clusters from the freezer. Carefully dip each one in the melted chocolate using a spoon to ensure they’re fully coated. Return them to the baking sheet.
- If you like, sprinkle a little sea salt on top for added flavor. Place the clusters back in the freezer for a few more minutes to harden the chocolate.
- Once set, they’re ready to be enjoyed—these bites are sure to satisfy your sweet cravings!
Notes
