Ingredients

  • 2 oz milk chocolate, finely chopped
  • 1 tbsp unsalted butter, at room temperature
  • 6 large egg yolks
  • 1/4 cup brown sugar
  • 2 tbsp Dutch-process cocoa powder
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 tsp kosher salt
  • 1 tsp vanilla extract
  • 1 1/2 tsp instant espresso powder
  • 2 tbsp powdered sugar
  • 1/2 cup cold heavy cream
  • Flaky salt, for finishing
  • Shaved chocolate, for finishing

Instructions

  1. Melt the chocolate and butter: In a large bowl, combine finely chopped bittersweet chocolate, milk chocolate, and unsalted butter. Set aside.
  2. Prepare the base: In a medium saucepan, whisk together egg yolks, brown sugar, cocoa powder, heavy cream, whole milk, and kosher salt. Heat over medium-low heat, stirring constantly until thickened (about 8-10 minutes).
  3. Combine and cool: Strain the thickened mixture through a fine mesh sieve into the bowl with the chocolates. Let sit, then add vanilla extract and stir until fully melted and incorporated.
  4. Set aside: Divide pudding into eight small jars (4 oz each) and refrigerate until chilled and set, roughly 3 hours.
  5. Prepare the espresso cream: In a bowl, whisk instant espresso powder and powdered sugar with half of the cold heavy cream until smooth. Add remaining cream and beat with an electric mixer until soft peaks form (around 3-4 minutes).
  6. Serve and enjoy: Top chilled pudding with a dollop of espresso cream, garnished with flaky salt and shaved chocolate.

Notes

Store chocolate pudding in airtight jars in the refrigerator for 2-3 days. For reheating, gently microwave or serve chilled.
