Description

Delightful pastries filled with rich cream and topped with a glossy chocolate sauce, perfect for any occasion.


Ingredients

  • 250 g water
  • 70 g unsalted butter, cubed
  • 1 tbsp granulated sugar
  • 1/2 tsp fine salt
  • 150 g bread flour
  • 4 large eggs (55g each, room temperature)
  • 75 g powdered sugar (for dusting)
  • 1 batch chocolate French pastry cream
  • 1 batch vanilla French pastry cream
  • 1 batch Chantilly cream
  • 1 batch chocolate sauce

Instructions

  1. In a medium saucepan, combine water, butter, sugar, and salt over medium heat. Once melted, remove from heat.
  2. Quickly stir in the flour until the mixture pulls away from the sides, forming a ball.
  3. Allow the dough to cool slightly; then beat in the eggs one at a time until the batter is smooth and glossy.
  4. Transfer the mixture into a piping bag. Pipe 4-inch lines onto a parchment-lined baking sheet, leaving space between each.
  5. Bake in a preheated oven at 200°C (390°F) for about 25-30 minutes until puffed and golden. Avoid opening the oven during baking.
  6. Once baked, let them cool on a wire rack.
  7. Using a pastry bag, fill half with vanilla cream, and half with chocolate cream.
  8. Dip the eclairs in the warm chocolate glaze or drizzle it over the top.

Notes

For best results, ensure eggs are at room temperature and do not rush the cooling process of the dough.
