Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
- Beat in the egg and vanilla extract until well blended.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add these dry ingredients to the wet mixture, mixing just until combined.
- Gently fold in the chopped strawberries.
- Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the cookies have set.
- Allow cookies to cool completely on a wire rack.
- Melt the chocolate chips.
- Dip the cooled cookies halfway into the melted chocolate, allowing excess to drip off.
- Sprinkle toppings while chocolate is warm if desired.
- Allow the chocolate to set before serving.
