- 2 cups almond flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup coconut oil (melted)
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the almond flour, baking soda, and salt until well combined.
- In another bowl, mix the melted coconut oil, honey or maple syrup, and vanilla extract until smooth.
- Combine the wet and dry ingredients, stirring until well incorporated.
- Gently fold in the chocolate chips.
- Scoop out dough portions onto the prepared baking sheet, leaving space between each one.
- Bake for 10-12 minutes or until the edges are slightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a thicker cookie, chill the dough in the fridge for 30 minutes before baking. These cookies can be stored in an airtight container for one week or frozen for up to three months.
