- 1/4 cup Dutch-process cocoa powder
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, room temperature
- 4 large eggs, room temperature
- 1 teaspoon pure vanilla extract
- 1 cup heavy whipping cream
- 1 package (8 ounces) cream cheese, room temperature
- 1/2 cup powdered sugar
- 1 teaspoon pure vanilla extract
- 1/2 cup heavy whipping cream (for filling)
- 1 teaspoon light corn syrup (optional, for shine)
- 1 bar (4 ounces) good quality chocolate
Instructions
- Preheat your oven to 350°F and prepare a jelly roll pan.
- Whisk together flour, baking powder, salt, and cocoa powder in a medium bowl.
- In a stand mixer, blend sugar and butter, then mix in eggs and vanilla.
- Gradually add the dry mixture to the wet ingredients until combined.
- Spread batter in the pan and bake for 10-12 minutes until springy.
- Cool for 1 minute, then roll the warm cake tightly with parchment paper and chill.
- For the filling, whip cream and beat cream cheese with powdered sugar and vanilla; fold in whipped cream.
- Unroll the cooled cake, spread the filling, roll it back up tightly, and chill.
- For ganache, heat cream and corn syrup, pour over chocolate, and stir until smooth.
- Drizzle ganache over the cake and refrigerate to set.
- Slice and enjoy!
