  • 1 cup Cooked Rice (white or brown)
  • 1 cup Black Beans, drained and rinsed
  • 1 cup Diced Tomatoes
  • 1 cup Shredded Lettuce
  • 1/2 cup Chipotle Ranch Dressing
  • 4 Large Tortillas

Instructions

  1. Preheat your grill to medium heat.
  2. In a mixing bowl, combine the olive oil, smoked paprika, cumin, salt, and pepper. Add the chicken breasts, ensuring they are well coated.
  3. Place the chicken on the grill and cook for 6-7 minutes on each side until fully cooked through (internal temperature of 165°F).
  4. Let the chicken rest for a few minutes before slicing it into bite-sized pieces.
  5. Lay a tortilla flat, add rice, black beans, grilled chicken, diced tomatoes, and shredded lettuce. Drizzle with chipotle ranch dressing.
  6. Roll the tortilla carefully, folding in the edges to enclose the filling tightly.
  7. Grill the wrapped burrito for one minute on each side for a crispy finish (optional).
