- 1 lb skinless and boneless Chicken Breast
- 2 tablespoons Olive Oil
- 1 tablespoon Smoked Paprika
- 1 teaspoon Cumin
- Salt and Pepper to taste
- 1 cup Cooked Rice (white or brown)
- 1 cup Black Beans, drained and rinsed
- 1 cup Diced Tomatoes
- 1 cup Shredded Lettuce
- 1/2 cup Chipotle Ranch Dressing
- 4 Large Tortillas
Instructions
- Preheat your grill to medium heat.
- In a mixing bowl, combine the olive oil, smoked paprika, cumin, salt, and pepper. Add the chicken breasts, ensuring they are well coated.
- Place the chicken on the grill and cook for 6-7 minutes on each side until fully cooked through (internal temperature of 165°F).
- Let the chicken rest for a few minutes before slicing it into bite-sized pieces.
- Lay a tortilla flat, add rice, black beans, grilled chicken, diced tomatoes, and shredded lettuce. Drizzle with chipotle ranch dressing.
- Roll the tortilla carefully, folding in the edges to enclose the filling tightly.
- Grill the wrapped burrito for one minute on each side for a crispy finish (optional).
Notes
Serve with tortilla chips and guacamole or a fresh salad for a complete meal. Marinate chicken overnight for enhanced flavor.
