- 2 lbs chicken thighs (boneless, skinless)
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground paprika
- 1 tsp ground turmeric
- 1/2 tsp ground cinnamon
- Salt and pepper, to taste
- 1/4 cup olive oil
- 1/4 cup plain yogurt
- 1/4 cup mayonnaise
- 1 lemon, juiced
- Pita bread, for serving
- Sliced vegetables (tomatoes, cucumbers, onions), for serving
Instructions
- In a bowl, combine minced garlic, cumin, coriander, paprika, turmeric, cinnamon, salt, pepper, and olive oil to form a marinade.
- Add the chicken thighs into the marinade, ensuring they are well coated. Cover and let sit in the refrigerator for at least 1 hour or, even better, overnight to allow the flavors to meld.
- Preheat a grill or skillet over medium-high heat. Place the marinated chicken on the grill and cook for 6-7 minutes on each side until cooked through and slightly charred. Once done, remove from heat and let it rest for a few minutes before slicing.
- For the garlic sauce, mix yogurt, mayonnaise, minced garlic, lemon juice, salt, and pepper in a separate bowl until smooth and well combined.
- Serve the sliced chicken inside pita bread, accompanied by a generous drizzle of garlic sauce and a mix of fresh vegetables like tomatoes, cucumbers, and onions.
