- 4 chicken thighs
- 2 spicy sausages, sliced
- 1 bell pepper, sliced (any color)
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1/4 cup white vinegar
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- Olive oil for cooking
- Fresh parsley for garnish
Instructions
- Heat olive oil over medium heat in a large skillet.
- Season the chicken thighs with salt and pepper before adding them to the skillet. Brown them on both sides until golden.
- Remove the chicken from the skillet and set aside.
- Add the sliced sausage to the skillet and cook until nicely browned.
- Toss in the chopped onion, bell pepper, and minced garlic. Sauté until the vegetables are softened.
- Return the browned chicken to the pan and pour in the chicken broth, followed by the white vinegar and red pepper flakes.
- Bring the mixture to a simmer, cover, and let it cook for about 30 minutes or until the chicken is cooked through.
- Serve hot, garnished with fresh parsley.
Notes
For the best flavor, consider marinating the chicken thighs in olive oil, garlic, and herbs for a couple of hours before cooking. Using bone-in chicken thighs will enhance the flavor.
