Description

  • 2 spicy sausages, sliced
  • 1 bell pepper, sliced (any color)
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/4 cup white vinegar
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil over medium heat in a large skillet.
  2. Season the chicken thighs with salt and pepper before adding them to the skillet. Brown them on both sides until golden.
  3. Remove the chicken from the skillet and set aside.
  4. Add the sliced sausage to the skillet and cook until nicely browned.
  5. Toss in the chopped onion, bell pepper, and minced garlic. Sauté until the vegetables are softened.
  6. Return the browned chicken to the pan and pour in the chicken broth, followed by the white vinegar and red pepper flakes.
  7. Bring the mixture to a simmer, cover, and let it cook for about 30 minutes or until the chicken is cooked through.
  8. Serve hot, garnished with fresh parsley.

Notes

For the best flavor, consider marinating the chicken thighs in olive oil, garlic, and herbs for a couple of hours before cooking. Using bone-in chicken thighs will enhance the flavor.
