A comforting Chicken Potato Soup filled with tender chicken, hearty potatoes, and crispy bacon, simmered in a creamy broth.
Ingredients

- 2 cups cooked chicken, shredded
- 4 cups potatoes, diced
- 1 cup bacon, chopped
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the rendered fat in the pot.
- Add diced onion, carrots, and celery into the same pot. Sauté until the vegetables are tender.
- Stir in the diced potatoes and pour in the chicken broth. Bring to a boil, then reduce heat to simmer until potatoes are cooked through.
- Add shredded chicken, heavy cream, and bacon back to the pot. Stir and heat until warmed.
- Season with salt and pepper to taste. Garnish with fresh parsley before serving.
Notes
Store leftovers in an airtight container for up to 3-4 days in the refrigerator or freeze for up to 3 months.
