Description

A comforting Chicken Potato Soup filled with tender chicken, hearty potatoes, and crispy bacon, simmered in a creamy broth.


Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups potatoes, diced
  • 1 cup bacon, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the rendered fat in the pot.
  2. Add diced onion, carrots, and celery into the same pot. Sauté until the vegetables are tender.
  3. Stir in the diced potatoes and pour in the chicken broth. Bring to a boil, then reduce heat to simmer until potatoes are cooked through.
  4. Add shredded chicken, heavy cream, and bacon back to the pot. Stir and heat until warmed.
  5. Season with salt and pepper to taste. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container for up to 3-4 days in the refrigerator or freeze for up to 3 months.
