A warm and cheesy Chicken Parmesan Casserole that combines tender chicken, marinara sauce, and layers of gooey mozzarella and Parmesan over pasta, perfect for busy weeknights.

- 4 cups cooked chicken, shredded (rotisserie chicken is great)
- 2 cups marinara sauce
- 1 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 2 cups cooked pasta (penne or rotini work best)
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh basil or parsley (optional for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the shredded chicken, garlic powder, Italian seasoning, salt, and pepper. Stir and cook for about 5 minutes until warmed through.
- In a mixing bowl, combine the cooked pasta, marinara sauce, half of the Parmesan, and half of the mozzarella cheese. Mix thoroughly.
- Fold the chicken mixture into the pasta combination until evenly distributed.
- Spread the casserole mixture into a greased 9×13-inch baking dish.
- Top off the dish with the remaining mozzarella and Parmesan cheeses.
- Cover with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden brown.
- Once baked, let the casserole cool for a few minutes and garnish with fresh basil or parsley if desired.
Notes
For a unique flavor, consider using a mix of cheeses or substituting marinara with pesto. This dish can be made vegetarian by replacing the chicken with sautéed mushrooms or eggplant.
