Description

A warm and cheesy Chicken Parmesan Casserole that combines tender chicken, marinara sauce, and layers of gooey mozzarella and Parmesan over pasta, perfect for busy weeknights.


Ingredients

  • 4 cups cooked chicken, shredded (rotisserie chicken is great)
  • 2 cups marinara sauce
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups cooked pasta (penne or rotini work best)
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil or parsley (optional for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the shredded chicken, garlic powder, Italian seasoning, salt, and pepper. Stir and cook for about 5 minutes until warmed through.
  3. In a mixing bowl, combine the cooked pasta, marinara sauce, half of the Parmesan, and half of the mozzarella cheese. Mix thoroughly.
  4. Fold the chicken mixture into the pasta combination until evenly distributed.
  5. Spread the casserole mixture into a greased 9×13-inch baking dish.
  6. Top off the dish with the remaining mozzarella and Parmesan cheeses.
  7. Cover with aluminum foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden brown.
  9. Once baked, let the casserole cool for a few minutes and garnish with fresh basil or parsley if desired.

Notes

For a unique flavor, consider using a mix of cheeses or substituting marinara with pesto. This dish can be made vegetarian by replacing the chicken with sautéed mushrooms or eggplant.
