Ingredients

- 2 cups orzo pasta
- 1 pound chicken breasts, diced
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1/2 cup basil pesto
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the diced chicken and cook until golden brown and cooked through, about 6-8 minutes.
- Stir in the orzo pasta and cook for 2 minutes.
- Add 4 cups of water or chicken broth and bring to a boil.
- Reduce heat and let it simmer, stirring occasionally, until the orzo is cooked, about 8-10 minutes.
- Once the orzo is tender, stir in the spinach, cherry tomatoes, and basil pesto. Cook for another 2-3 minutes until the spinach is wilted.
- Season with salt and pepper to taste, and serve warm with grated Parmesan cheese if desired.
Notes
For added flavor, use chicken broth instead of water.
