Description

A quick and flavorful one-pot meal featuring tender chicken, orzo pasta, fresh spinach, and juicy cherry tomatoes.


Ingredients

  • 2 cups orzo pasta
  • 1 pound chicken breasts, diced
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1/2 cup basil pesto
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced chicken and cook until golden brown and cooked through, about 6-8 minutes.
  3. Stir in the orzo pasta and cook for 2 minutes.
  4. Add 4 cups of water or chicken broth and bring to a boil.
  5. Reduce heat and let it simmer, stirring occasionally, until the orzo is cooked, about 8-10 minutes.
  6. Once the orzo is tender, stir in the spinach, cherry tomatoes, and basil pesto. Cook for another 2-3 minutes until the spinach is wilted.
  7. Season with salt and pepper to taste, and serve warm with grated Parmesan cheese if desired.

Notes

For added flavor, use chicken broth instead of water.
