- 3–4 boneless, skinless chicken breasts, cut into bite-sized pieces
- Lo Mein noodles (fresh or dried)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 carrots, thinly sliced
- 2 green onions, chopped
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh minced garlic
Instructions
- Cook the Noodles: Prepare the lo mein noodles according to package instructions until al dente. Drain and set aside.
- Sauté the Chicken: Heat a large skillet or wok over medium-high heat and add a splash of sesame oil. Cook the chicken pieces until golden brown and no longer pink, about 6-8 minutes. Remove from the skillet and set aside.
- Stir-Fry the Vegetables: In the same skillet, add a bit more sesame oil if necessary. Stir-fry the sliced bell peppers, carrots, and green onions for about 3-4 minutes until they’re tender yet still crisp.
- Combine Ingredients: Return the cooked chicken to the skillet. Add in the lo mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until well combined and heated through.
- Serve: Enjoy your delicious Chicken Lo Mein hot, with extra soy sauce if desired.
