Ingredients

  • 34 boneless, skinless chicken breasts, cut into bite-sized pieces
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 carrots, thinly sliced
  • 2 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Instructions

  1. Cook the Noodles: Prepare the lo mein noodles according to package instructions until al dente. Drain and set aside.
  2. Sauté the Chicken: Heat a large skillet or wok over medium-high heat and add a splash of sesame oil. Cook the chicken pieces until golden brown and no longer pink, about 6-8 minutes. Remove from the skillet and set aside.
  3. Stir-Fry the Vegetables: In the same skillet, add a bit more sesame oil if necessary. Stir-fry the sliced bell peppers, carrots, and green onions for about 3-4 minutes until they’re tender yet still crisp.
  4. Combine Ingredients: Return the cooked chicken to the skillet. Add in the lo mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until well combined and heated through.
