- 3–4 boneless, skinless chicken breasts
- Lo Mein noodles (fresh or dried)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 carrots, thinly sliced
- 2 green onions, chopped
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh minced garlic
Instructions
- Cook the lo mein noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet or wok, heat sesame oil over medium-high heat.
- Add the chicken breasts and sauté until golden brown and fully cooked, about 6-8 minutes. Remove the chicken and set aside.
- In the same skillet, add sliced bell peppers, carrots, and green onions, stir-frying for 3-4 minutes until tender yet crisp.
- Return chicken to the skillet with the lo mein noodles, soy sauce, sesame oil, and minced garlic. Toss until well mixed and heated through.
- Serve hot, with extra soy sauce if desired.
Notes
For variety, feel free to swap the chicken for tofu or shrimp and add additional vegetables like broccoli or snap peas. Store leftovers in an airtight container for up to 3-4 days.
