- 3–4 boneless, skinless chicken breasts
- Lo Mein noodles (fresh or dried)
- 1 red bell pepper, julienned
- 1 yellow bell pepper, julienned
- 2 carrots, thinly sliced
- 2 green onions, chopped
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh garlic, minced
Instructions
- Prepare the noodles: Cook the Lo Mein noodles according to the package instructions until al dente, drain, and set aside.
- Sauté the chicken: In a large skillet or wok over medium-high heat, add a splash of oil. Once hot, add the chicken breasts and sauté for 6-8 minutes until golden brown and fully cooked. Remove from the skillet.
- Stir-fry the veggies: In the same skillet, toss in the bell peppers, carrots, and green onions. Stir-fry them for about 3-4 minutes until they are tender yet still crisp.
- Combine everything: Return the cooked chicken to the skillet, then add the cooked Lo Mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until evenly mixed.
- Serve and enjoy: Serve the Chicken Lo Mein hot, drizzling with extra soy sauce if desired.
