Description

A quick and flavorful Chicken Lo Mein recipe filled with juicy chicken and colorful vegetables, perfect for a cozy meal at home.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper, julienned
  • 1 yellow bell pepper, julienned
  • 2 carrots, thinly sliced
  • 2 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh garlic, minced

Instructions

  1. Prepare the noodles: Cook the Lo Mein noodles according to the package instructions until al dente, drain, and set aside.
  2. Sauté the chicken: In a large skillet or wok over medium-high heat, add a splash of oil. Once hot, add the chicken breasts and sauté for 6-8 minutes until golden brown and fully cooked. Remove from the skillet.
  3. Stir-fry the veggies: In the same skillet, toss in the bell peppers, carrots, and green onions. Stir-fry them for about 3-4 minutes until they are tender yet still crisp.
  4. Combine everything: Return the cooked chicken to the skillet, then add the cooked Lo Mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until evenly mixed.
  5. Serve and enjoy: Serve the Chicken Lo Mein hot, drizzling with extra soy sauce if desired.
