Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the diced onion, green bell pepper, and celery. Sauté until softened, roughly 5-7 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Sprinkle the flour over the vegetable mixture and stir to combine. Cook for about 2-3 minutes, until the flour is lightly browned.
- Slowly add the chicken broth, stirring continuously to avoid lumps.
- Add the diced chicken and Cajun seasoning. Bring the mixture to a gentle simmer.
- Reduce the heat and let it simmer for 30-40 minutes, stirring occasionally. Season with salt and pepper to taste.
- Serve the Chicken Étouffée over cooked white rice and garnish with chopped green onions.
