- 2 cups cooked rice
- 2 cups cooked chicken, shredded
- 1 can (10 oz) enchilada sauce
- 1 cup black beans, drained and rinsed
- 1 cup corn (fresh or frozen)
- 1 cup shredded cheese (cheddar or Mexican blend)
- ½ cup diced onions
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the cooked rice, shredded chicken, enchilada sauce, black beans, corn, half of the cheese, diced onions, garlic powder, cumin, salt, and pepper.
- Stir until well mixed, then pour the mixture into a greased 9×13 inch casserole dish.
- Spread the mixture evenly and top it with the remaining cheese.
- Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
Garnish with fresh cilantro, avocado slices, or a dollop of sour cream for added flavor.
