- 2 cups shredded cheddar cheese
- 6 strips of bacon
- Salt and pepper to taste
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 2 small boneless, skinless chicken breasts
- 2 cups uncooked rotini pasta (or your favorite shape)
- 2 tablespoons of butter
- 2 tablespoons of flour
- 1 tablespoon minced garlic
- 2 cups half-and-half
- 2 tablespoons dry ranch dressing seasoning mix
Instructions
- In a large skillet over low heat, cook the bacon until crisp. Set aside, keeping some drippings in the pan.
- Thinly slice the chicken breasts, season with salt, pepper, onion powder, and Italian seasoning, then sear in the drippings until cooked through. Cube the chicken.
- In a separate pot, boil the rotini in salted water until al dente. Drain and set aside.
- Melt the butter in the same skillet, sauté minced garlic until fragrant. Stir in flour to create a roux, then whisk in half-and-half. Add ranch seasoning and cheese, stirring until smooth.
- Combine cooked pasta, cubed chicken, and top with bacon. Garnish and serve warm.
Notes
For a complete meal, serve with a fresh garden salad or garlic bread. To store, refrigerate for 3-4 days or freeze for up to three months.
