Description

Ingredients

  • 2 cups shredded cheddar cheese
  • 6 strips of bacon
  • Salt and pepper to taste
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 small boneless, skinless chicken breasts
  • 2 cups uncooked rotini pasta (or your favorite shape)
  • 2 tablespoons of butter
  • 2 tablespoons of flour
  • 1 tablespoon minced garlic
  • 2 cups half-and-half
  • 2 tablespoons dry ranch dressing seasoning mix

Instructions

  1. In a large skillet over low heat, cook the bacon until crisp. Set aside, keeping some drippings in the pan.
  2. Thinly slice the chicken breasts, season with salt, pepper, onion powder, and Italian seasoning, then sear in the drippings until cooked through. Cube the chicken.
  3. In a separate pot, boil the rotini in salted water until al dente. Drain and set aside.
  4. Melt the butter in the same skillet, sauté minced garlic until fragrant. Stir in flour to create a roux, then whisk in half-and-half. Add ranch seasoning and cheese, stirring until smooth.
  5. Combine cooked pasta, cubed chicken, and top with bacon. Garnish and serve warm.

Notes

For a complete meal, serve with a fresh garden salad or garlic bread. To store, refrigerate for 3-4 days or freeze for up to three months.
