- 4 cups cooked shredded chicken (rotisserie chicken works great)
- 6 slices bacon, fried and crumbled
- 4 oz cream cheese
- ½ cup sour cream
- 1 packet ranch dressing seasoning
- 2 cups shredded cheddar cheese
- Chopped parsley for garnish
Instructions
- Prepare the Cauliflower Rice: Steam the cauliflower rice according to package instructions and set aside.
- Cook the Bacon: Fry the bacon slices in a skillet until crispy. Drain on paper towels, crumble, and set aside.
- Make the Creamy Sauce: In a large skillet over medium heat, melt the cream cheese and sour cream together, stirring until you achieve a smooth consistency.
- Add Flavors: Stir in the ranch seasoning and shredded cheddar until everything is melted and combined.
- Assemble the Bowls: Add the shredded chicken and steamed cauliflower rice to the skillet. Toss everything together to coat in the creamy sauce. Mix in half of the crumbled bacon and cook until everything is heated through.
- Serve: Divide the mixture into bowls. Top with the remaining bacon and a sprinkle of chopped parsley for that fresh finish.
