- 3 1/4 cups (~325g) almond flour (unbleached, fine ground)
- 1 1/4 cups granulated sugar (unrefined cane sugar)
- 2 large eggs (room temperature)
- 3 teaspoons natural almond extract
- A pinch of salt
Instructions
- Preheat your oven to 350°F (or 325°F for convection bake).
- Line one or two baking sheets with parchment paper.
- In a large bowl, combine the eggs, sugar, and almond extract. Stir until well blended.
- Add the almond flour and a pinch of salt to the mixture. Mix thoroughly.
- Scoop about 1 tablespoon of dough and roll it into a ball. Place the balls on the baking sheets, spacing them 1-2 inches apart.
- Top each cookie with a few sliced almonds.
- Bake for 15-17 minutes or until cookie tops feel dry and edges turn golden brown.
- Let them cool on the baking sheets, then dust with powdered sugar if desired.
