Ingredients

  • 1 1/4 cups granulated sugar (unrefined cane sugar)
  • 2 large eggs (room temperature)
  • 3 teaspoons natural almond extract
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (or 325°F for convection bake).
  2. Line one or two baking sheets with parchment paper.
  3. In a large bowl, combine the eggs, sugar, and almond extract. Stir until well blended.
  4. Add the almond flour and a pinch of salt to the mixture. Mix thoroughly.
  5. Scoop about 1 tablespoon of dough and roll it into a ball. Place the balls on the baking sheets, spacing them 1-2 inches apart.
  6. Top each cookie with a few sliced almonds.
  7. Bake for 15-17 minutes or until cookie tops feel dry and edges turn golden brown.
  8. Let them cool on the baking sheets, then dust with powdered sugar if desired.
