Ingredients

  • 1 can of beans (black or pinto)
  • 1 cup corn (frozen or canned)
  • 2 cups ready rice (instant or precooked)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • 1 cup water
  • Salt and pepper to taste
  • Optional toppings: sliced tomatoes, avocado, sour cream, cilantro

Instructions

  1. In a large skillet, brown the lean ground beef over medium heat until cooked through and drain any excess fat.
  2. Stir in the taco seasoning, drained beans, corn, and water, then bring to a simmer for about 5 minutes.
  3. Mix in the ready rice until everything is well combined.
  4. Sprinkle the shredded cheese over the top, cover the skillet, and let it melt for 2-3 minutes.
  5. Remove from heat and serve hot, adding your favorite toppings.

Notes

For a spicier dish, add diced jalapeños or cayenne pepper. Experiment with different cheeses for varied flavors.
