Cheesy Hamburger Potato Soup

  • Total Time: 30 minutes
  • Yield: 4 servings 1x
  • Diet: Meat

Description

A rich and hearty soup made with ground beef, creamy potatoes, and melty cheese, perfect for cozy evenings.

Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced (Russet or Yukon Gold)
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, cooking until softened, about 3-4 minutes.
  2. Add ground beef, breaking it up as it cooks until browned. Drain any excess grease.
  3. Stir in diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  4. Pour in milk and heavy cream, stirring to combine and heat through without boiling.
  5. Gradually add shredded cheddar cheese, stirring until fully melted and soup is smooth.
  6. Season with salt and pepper. Let simmer for 5-10 minutes to thicken and meld flavors.
  7. Ladle soup into bowls and serve hot, garnished with more cheese, bacon bits, or green onions if desired.

Notes

For extra flavor, you can add diced bacon or use freshly shredded cheese for better melting. Serve with crusty bread for dipping.
