- 4 cups potatoes, peeled and diced
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 cup heavy cream
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sautéing for about 3-4 minutes until softened.
- Add ground beef to the pot, breaking it apart as it cooks until browned. Drain excess grease.
- Stir in diced potatoes and chicken broth. Bring to a boil, reduce heat, and simmer for 15-20 minutes until potatoes are tender.
- Pour in milk and heavy cream, stirring gently until heated through.
- Gradually add shredded cheddar cheese, stirring until melted and smooth.
- Season with salt and pepper, simmer for an additional 5-10 minutes to meld flavors.
- Ladle into bowls and serve hot, garnished with extra cheese or toppings as desired.
Notes
For a vegetarian version, substitute ground turkey with lentils or plant-based meat and use veggie broth.
