  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sautéing for about 3-4 minutes until softened.
  2. Add ground beef to the pot, breaking it apart as it cooks until browned. Drain excess grease.
  3. Stir in diced potatoes and chicken broth. Bring to a boil, reduce heat, and simmer for 15-20 minutes until potatoes are tender.
  4. Pour in milk and heavy cream, stirring gently until heated through.
  5. Gradually add shredded cheddar cheese, stirring until melted and smooth.
  6. Season with salt and pepper, simmer for an additional 5-10 minutes to meld flavors.
  7. Ladle into bowls and serve hot, garnished with extra cheese or toppings as desired.
