Description

Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup ricotta cheese
  • 1 cup cream cheese, softened
  • 1/4 cup sugar
  • 1/2 teaspoon lemon zest
  • Berry sauce or fresh fruit for serving

Instructions

  1. In a medium bowl, whisk together the flour, eggs, milk, melted butter, and vanilla extract until smooth.
  2. Preheat a non-stick skillet over medium heat. Pour a thin layer of batter, swirling it to cover the bottom. Cook until lightly golden, then flip and cook for another 30 seconds. Repeat with the remaining batter.
  3. In another bowl, combine the ricotta, cream cheese, sugar, and lemon zest. Mix until smooth and creamy.
  4. Spoon a generous amount of the cheese mixture onto each crepe. Fold the sides over and roll tightly.
  5. In the skillet, pan-fry the blintzes until golden brown on all sides, about 2–3 minutes per side.
  6. Serve warm topped with berry sauce or fresh fruit.

Notes

Dust with powdered sugar for a classic dessert feel. Pair with Greek yogurt or a drizzle of honey for more richness.
