- 1 cup all-purpose flour
- 2 large eggs
- 1 cup milk
- 2 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 1 cup ricotta cheese
- 1 cup cream cheese, softened
- 1/4 cup sugar
- 1/2 teaspoon lemon zest
- Berry sauce or fresh fruit for serving
Instructions
- In a medium bowl, whisk together the flour, eggs, milk, melted butter, and vanilla extract until smooth.
- Preheat a non-stick skillet over medium heat. Pour a thin layer of batter, swirling it to cover the bottom. Cook until lightly golden, then flip and cook for another 30 seconds. Repeat with the remaining batter.
- In another bowl, combine the ricotta, cream cheese, sugar, and lemon zest. Mix until smooth and creamy.
- Spoon a generous amount of the cheese mixture onto each crepe. Fold the sides over and roll tightly.
- In the skillet, pan-fry the blintzes until golden brown on all sides, about 2–3 minutes per side.
- Serve warm topped with berry sauce or fresh fruit.
Notes
Dust with powdered sugar for a classic dessert feel. Pair with Greek yogurt or a drizzle of honey for more richness.
