Description

A warm and comforting Cheddar Garlic Herb Potato Soup, filled with creamy, cheesy goodness and delightful flavors of garlic and fresh herbs.


Ingredients

  • 2 Yukon Gold potatoes, peeled and cubed
  • 1 cup sharp cheddar cheese, grated
  • 3 cloves garlic, minced
  • 1/4 cup fresh herbs (such as thyme and parsley)
  • 1 onion, diced
  • 4 cups vegetable broth or chicken broth
  • 1/2 cup heavy cream or milk
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons olive oil or butter

Instructions

  1. In a large pot, heat olive oil or butter over medium heat. Add diced onion and minced garlic, and sauté until softened.
  2. Add peeled and cubed Yukon Gold potatoes, and stir to combine.
  3. Pour in vegetable or chicken broth, enough to cover the potatoes, and bring to a boil.
  4. Once boiling, reduce heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.
  5. Blend the soup using an immersion blender or transfer to a blender to puree until smooth.
  6. Stir in heavy cream or milk, and then add grated sharp cheddar cheese until melted.
  7. Season with salt, pepper, and fresh herbs to taste.
  8. Serve hot, garnished with additional herbs or cheese.
