A warm and comforting Cheddar Garlic Herb Potato Soup, filled with creamy, cheesy goodness and delightful flavors of garlic and fresh herbs.
Ingredients

- 2 Yukon Gold potatoes, peeled and cubed
- 1 cup sharp cheddar cheese, grated
- 3 cloves garlic, minced
- 1/4 cup fresh herbs (such as thyme and parsley)
- 1 onion, diced
- 4 cups vegetable broth or chicken broth
- 1/2 cup heavy cream or milk
- Salt, to taste
- Pepper, to taste
- 2 tablespoons olive oil or butter
Instructions
- In a large pot, heat olive oil or butter over medium heat. Add diced onion and minced garlic, and sauté until softened.
- Add peeled and cubed Yukon Gold potatoes, and stir to combine.
- Pour in vegetable or chicken broth, enough to cover the potatoes, and bring to a boil.
- Once boiling, reduce heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.
- Blend the soup using an immersion blender or transfer to a blender to puree until smooth.
- Stir in heavy cream or milk, and then add grated sharp cheddar cheese until melted.
- Season with salt, pepper, and fresh herbs to taste.
- Serve hot, garnished with additional herbs or cheese.
Notes
Feel free to customize with additional herbs or toppings like crispy bacon bits or a dollop of sour cream.
