- 2 cups fresh tomatoes, diced
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1 cup mozzarella cheese, shredded
- 8 oz cream cheese, softened
- 2 tbsp olive oil
- Salt to taste
- Pepper to taste
- Crusty bread for serving
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the diced fresh tomatoes, minced garlic, chopped basil, and olive oil. Season with salt and pepper to taste.
- In another bowl, mix the mozzarella cheese and cream cheese until smooth.
- Layer the tomato mixture in a baking dish, followed by the cheese mixture on top.
- Bake for 20-25 minutes, or until bubbly and golden brown on top.
- Let it cool slightly before serving warm with crusty bread for dipping.
Notes
For a festive touch, drizzle a little balsamic reduction over the top just before serving.
