  • 1 lb smoked sausage, sliced (Andouille or kielbasa)
  • 1 bell pepper, chopped

  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup shredded cheese (cheddar or cream cheese)
  • 2 tbsp Cajun seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large pot, heat olive oil over medium heat. Add the sliced sausage and cook until browned.
  3. Toss in the chopped bell pepper, onion, and garlic. Sauté until the vegetables are tender.
  4. Stir in the Cajun seasoning and mix well.
  5. Pour in the heavy cream and bring to a simmer.
  6. Add the cooked pasta and shredded cheese, stirring until the cheese melts and the sauce is creamy.
  7. Season with salt and pepper to taste. Serve hot garnished with fresh parsley.
