- 1 lb smoked sausage, sliced (Andouille or kielbasa)
- 1 bell pepper, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups heavy cream
- 1 cup shredded cheese (cheddar or cream cheese)
- 2 tbsp Cajun seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large pot, heat olive oil over medium heat. Add the sliced sausage and cook until browned.
- Toss in the chopped bell pepper, onion, and garlic. Sauté until the vegetables are tender.
- Stir in the Cajun seasoning and mix well.
- Pour in the heavy cream and bring to a simmer.
- Add the cooked pasta and shredded cheese, stirring until the cheese melts and the sauce is creamy.
- Season with salt and pepper to taste. Serve hot garnished with fresh parsley.
Notes
