- 8 oz pasta (penne or fusilli)
- 1 lb smoked sausage, sliced
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- Olive oil
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat.
- Add the sliced sausage and cook until nicely browned.
- Toss in the chopped onions, bell peppers, and minced garlic; sauté until aromatic and softened.
- Incorporate the Cajun seasoning and stir to combine everything well.
- Pour in the heavy cream and bring the mixture to a gentle simmer.
- Add the uncooked pasta and about 2 cups of water (or enough to cover the pasta).
- Cook according to the pasta package directions until al dente, stirring occasionally to prevent sticking.
- Once the pasta is ready, fold in the shredded cheese until it melts and creates a creamy sauce.
- Season with salt and pepper to taste.
- Garnish with chopped parsley if desired, and serve hot.
Notes
To keep leftovers fresh, store in an airtight container in the fridge for up to 3 days. For freezing, portion and thaw in the refrigerator overnight.
