Description

A hearty and creamy potato soup infused with andouille sausage and Cajun spices, perfect for any gathering.


Ingredients

  • 1 lb Andouille sausage
  • 4 large russet potatoes, diced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 2 tsp Cajun spices
  • 2 cups heavy cream
  • 1 cup shredded cheddar cheese (optional)
  • Salt & pepper to taste
  • 4 cups chicken broth

Instructions

  1. In a large pot, heat the andouille sausage over medium heat. Cook until browned, then remove from the pot and set aside.
  2. In the same pot, add diced onion, bell pepper, celery, and minced garlic. Sauté until everything is soft.
  3. Stir in the chopped potatoes, Cajun spices, and chicken broth. Bring to a boil, then reduce the heat and let it simmer until the potatoes are tender.
  4. Add heavy cream and shredded cheddar cheese, then return the sausage to the pot. Mix well.
  5. Season with salt and pepper to your liking.
  6. Serve hot, garnished with additional cheese or green onions if you desire.

Notes

For a lighter version, substitute potatoes with cauliflower. The soup can be stored in an airtight container for up to 4 days in the refrigerator or frozen for up to 3 months.
