A hearty and creamy potato soup infused with andouille sausage and Cajun spices, perfect for any gathering.
Ingredients

- 1 lb Andouille sausage
- 4 large russet potatoes, diced
- 1 onion, diced
- 1 bell pepper, diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 2 tsp Cajun spices
- 2 cups heavy cream
- 1 cup shredded cheddar cheese (optional)
- Salt & pepper to taste
- 4 cups chicken broth
Instructions
- In a large pot, heat the andouille sausage over medium heat. Cook until browned, then remove from the pot and set aside.
- In the same pot, add diced onion, bell pepper, celery, and minced garlic. Sauté until everything is soft.
- Stir in the chopped potatoes, Cajun spices, and chicken broth. Bring to a boil, then reduce the heat and let it simmer until the potatoes are tender.
- Add heavy cream and shredded cheddar cheese, then return the sausage to the pot. Mix well.
- Season with salt and pepper to your liking.
- Serve hot, garnished with additional cheese or green onions if you desire.
Notes
For a lighter version, substitute potatoes with cauliflower. The soup can be stored in an airtight container for up to 4 days in the refrigerator or frozen for up to 3 months.
