- 2 chicken breasts, diced
- 2 tablespoons Cajun seasoning
- 8 oz pasta (fettuccine or penne)
- 1 cup heavy cream
- 1 tablespoon olive oil
- 1 bell pepper, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for garnish
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions, then drain and set aside.
- In a large skillet over medium heat, heat the olive oil.
- Add the diced chicken, sprinkling with Cajun seasoning. Cook until the chicken is browned and cooked through.
- Remove the cooked chicken from the skillet and set aside.
- In the same skillet, add the sliced bell pepper, diced onion, and minced garlic. Sauté until the veggies are softened.
- Return the chicken to the skillet and pour in the heavy cream, stirring to combine. Allow it to simmer for a few minutes.
- Add the cooked pasta and mix thoroughly until well combined.
- Season with salt and pepper to taste.
Notes
Garnish with freshly grated Parmesan cheese and chopped parsley. Pair with a side salad or garlic bread.
