Ingredients

  • 2 chicken breasts, diced
  • 2 tablespoons Cajun seasoning
  • 8 oz pasta (fettuccine or penne)
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 bell pepper, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for garnish
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package instructions, then drain and set aside.
  2. In a large skillet over medium heat, heat the olive oil.
  3. Add the diced chicken, sprinkling with Cajun seasoning. Cook until the chicken is browned and cooked through.
  4. Remove the cooked chicken from the skillet and set aside.
  5. In the same skillet, add the sliced bell pepper, diced onion, and minced garlic. Sauté until the veggies are softened.
  6. Return the chicken to the skillet and pour in the heavy cream, stirring to combine. Allow it to simmer for a few minutes.
  7. Add the cooked pasta and mix thoroughly until well combined.
  8. Season with salt and pepper to taste.

Notes

Garnish with freshly grated Parmesan cheese and chopped parsley. Pair with a side salad or garlic bread.
