Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and 1/2 cup of powdered sugar until the mixture is light and fluffy.
  3. Stir in the vanilla extract until well combined.
  4. Gradually add in the flour, finely chopped pecans, and salt. Mix until your dough comes together nicely.
  5. Roll the dough into small balls, about 1 inch in size, and place them on a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for 10-12 minutes, or until the bottoms are lightly golden.
  7. Once baked, remove from the oven and let them cool for a few moments. Carefully roll the cookies in powdered sugar while still warm.
