- 1 cup finely chopped pecans

Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and 1/2 cup of powdered sugar until the mixture is light and fluffy.
- Stir in the vanilla extract until well combined.
- Gradually add in the flour, finely chopped pecans, and salt. Mix until your dough comes together nicely.
- Roll the dough into small balls, about 1 inch in size, and place them on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 10-12 minutes, or until the bottoms are lightly golden.
- Once baked, remove from the oven and let them cool for a few moments. Carefully roll the cookies in powdered sugar while still warm.
- Transfer to a wire rack to cool completely. Once cool, roll in powdered sugar again before serving.
