Indulgent rolls filled with roasted garlic and gooey mozzarella, perfect for any gathering.
Ingredients
- Garlic head: 1, roasted
- Salt: a sprinkle for roasting
- Olive oil: 30 grams
- Butter: 50 grams (for the dough) + 25 grams (for garlic butter)
- Fresh parsley: 1 tablespoon, chopped
- Warm milk: 90 grams (plus more for an egg wash)
- Active dry yeast: 7 grams
- Honey: 25 grams
- All-purpose flour: 200 grams
- Bread flour: 50 grams
- Milk powder: 20 grams (optional)
- Egg yolks: from 2 eggs
- Sugar: 1 tablespoon
- Mozzarella cheese: 200 grams
- Egg: 1 (for egg wash)
Instructions
- Roast the garlic by cutting off the top, drizzling with olive oil, sprinkling salt, and wrapping in foil. Roast at 160°C (320°F) for 2 hours.
- Make garlic butter by mixing roasted garlic with softened butter, parsley, and garlic oil.
- In a bowl, combine warm milk, yeast, and honey. Let sit for 10 minutes until frothy.
- In a mixing bowl, combine flours, sugar, milk powder, butter, salt, egg yolks, and yeast mixture.
- Knead the dough on medium speed for 15-20 minutes until soft and smooth.
- Let dough proof in a covered bowl for about 1 hour and 30 minutes, or until doubled in size.
- Roll out the dough to 1/4 cm (1/8 inch) thickness, spread garlic butter, and sprinkle mozzarella cheese on top.
- Roll the dough into a log and cut into 6 portions. Place on a baking sheet.
- Cover and let proof for another 30 minutes.
- Preheat oven to 175°C (350°F). Brush with egg wash and bake for 20-25 minutes, checking at 20 minutes.
- Brush with leftover garlic butter and sprinkle with parsley before serving.
Notes
For best flavor, use freshly roasted garlic. These rolls can be frozen for longer storage.
